Wildwood - A refrigeration idea on the part of a lot of these food carts I see everywhere is not so great. Some use the back of a pickup truck or inside an SUV for storing their perishables under a boiling hot sun. Is that to precook the hot dogs? Worse are these "market" events where anyone can sell an amazing array of whatever with no gloves, no wash sink, no thermometers, no licenses, right out in the open. Do health inspectors exist anymore?
